Bakery Manager – Collective Bakery
We’re looking for a new Bakery Manager to join the team at Collective Bakery. As Bakery Manager, you’ll oversee both the production and front-of-house (FoH) operations at our bakery, where you’ll lead a dedicated and skilled team of around 20 people.
Coffee Collective is a specialty coffee roastery with its own cafés and bakery in Copenhagen. We work directly with coffee farmers to ensure high quality, transparency, and sustainability throughout the value chain. Our mission is to create exceptional coffee experiences while generating greater value for everyone involved – from farmer to guest.
Just like with our coffee, we’ve built our bakery on a core principle of sourcing directly from producers we know and trust. We believe in creating meaningful relationships with those behind the raw materials and learning from one another to continuously improve.
The purpose of Collective Bakery is to supply the Coffee Collective coffee bars with breads, rolls and pastry, supporting their purpose of creating exceptional coffee experiences. Next to that the bakery serves as an outlet for bread and pastry-products.

Your responsibilities will include:
- Logistics & Operations: Ensure smooth and efficient daily operations, with focus on both production and front-of-house.
- Full responsibility for FoH & Production: Make sure both areas run in harmony and that any challenges are addressed promptly and effectively.
- Direction & Communication: Maintain clear and effective communication between FoH and production, between the bakery and our cafés, and with our marketing team to support sales and operations.
- Budget & Financial Oversight: Manage the bakery’s budget across both areas, including cost control and efficiency improvements – without compromising on quality.
- Invoicing & Admin: Oversee billing and ensure administrative systems are up to date.
- Supplier Relations: Seek out and negotiate with suppliers who align with our quality standards and values.
- Menu Development: Work closely with the Head Baker to develop cost-effective products with strong sales potential – both for retail and wholesale. Your strategic insight will play a key role in shaping the menu.
- Team Leadership: Responsible for recruitment, shift planning, and ensuring the team is trained, supported, and working effectively.
The ideal candidate:
- Solid experience with high-volume bakery production, workflow optimization, and operational planning.
- Commercial mindset and the ability to analyze customer flow and adapt the product range accordingly.
- Strong understanding of retail, customer experience, and visual merchandising.
- Experience with seasonal menu development and product positioning.
- Proven leadership and scheduling skills.
- Financial acumen and experience with operational cost structures (e.g., BoM).
- A strong sense of ownership and a proactive approach to responsibility.
- Excellent collaboration and communication skills.
- Well connected in Copenhagen, ideally fluent in Danish and near-native in English.
The role
You’ll be based at Collective Bakery on Nørrebrogade and will report to the CEO of Coffee Collective. The role is split between production and office days. The Head Baker, FoH Manager, and front-of-house staff report directly to you.
Working hours are 37 hours per week principally between Monday-Sunday 06-20. For example, 4-5 workdays per week; 2 shifts in bakery sale, 3 days in office/admin/training/ developmental projects. Our bakery operation is a 7-day business, and we expect the Bakery Manager to operate a healthy rotating schedule for themselves and their team.
